Guadalajara Restaurant has reopened

After an absence of several years, Guadalajara Restaurant has reopened just off the corner of 21st and North Prince streets in The Master’s Center.

It held a ribbon cutting Tuesday with ambassadors from the Clovis-Curry County Chamber of Commerce present.

John Rink, who describes himself as the person who oversees operations, outlined the administrative structure of the business.

“Sid Strebeck is the owner, of course. ‘King of the Kitchen’ is Mike Mendoza (grandson of Guadalajara founder Don Librado Casillas), Bobby Robles is our manager and assistant managers are Jennifer Chavez and Jackie Zediker,” Rink said.

The restaurant opened Oct. 6. Hours of operation are 11 a.m. to 9 p.m. Sunday through Thursday and 11 a.m. to 10 p.m. Friday and Saturday.
