Creative Living: Moroccan Tagines coming up on shows

Information on what perfection looks like, cooking with Moroccan Tagines, and an online craft magazine will be the featured topics on “Creative Living” 9:30 p.m. Tuesday and noon Thursday (all times Mountain).

Are you more concerned with what others think? Do mistakes equal failure or the risk of rejection? Do you have a constant need for status or worth to maintain attachment or belonging? If you answered yes to any of these questions, you see what perfectionism looks like. Author, Jane Bluestein will discuss these and other traits to watch out for. Her business is Instructional Support Services, Inc. and she’s from Albuquerque.

John Vollertsen, also known as Chef Johnny Vee, is going to demonstrate how to cook with Moroccan Tagines and prepare a preserved lemon couscous dish. He is the owner of Las Cosas Cooking School in Santa Fe.

Ann Butler and Lisa Rojas are publishers of an online magazine called Bella Crafts. Each issue is “chock” full of photographs, instructions, projects and ideas for crafts of all types, as well as new products on the market. Various designers and crafters are featured, along with their area of expertise. Butler lives in Villard, Minnesota and Rojas is from Victorville, California.

Information on organic skin care products, growing pumpkins and gourds, and making ottomans and tuffets will be the featured topics on “Creative Living” noon Tuesday and 2 p.m. Saturday.

Vincene Parrinello is the founder of Wai Hope Organic Skincare, and she’s going to talk about why more women and men are turning to organic skin care products which may be a safer route in caring for the skin. She’s from San Diego, California.

Curt Jaynes owns and operates GardenSource Nursery & Landscaping in Portales, and he’s going to talk about how to grow pumpkins and gourds and share some usage tips as well as tell how to identify the various products.

Rebecca Peck represents The Upholstery Studio, and she’s going to demonstrate making easy ottomans and tuffets. Or, if you don’t want to make it yourself, she’ll share some tips on where to go and how to choose ready-made ones. She’s from Phoenixville, Pennsylvania.

Moroccan Lamb, Fennel & Date Tagine

3 tablespoons olive oil

1 red onion, thinly sliced

1 fennel bulb, trimmed and thinly sliced

4 garlic cloves, thinly sliced

1 1/2 lbs. lamb stew meat

3/4 teaspoon cayenne pepper

1 teaspoon ground ginger

2 teaspoons toasted and ground cumin seeds

2 teaspoons toasted and ground coriander seeds

Pinch of allspice

1/2 teaspoon kosher salt

1 cup pitted dates, chopped

2 cups chicken stock

Sprigs of cilantro

Heat 2 tablespoons olive oil in a Tagine and add onion, fennel and garlic and sauté until the onions begin to brown. Transfer vegetables to a plate. Add remaining oil to the Tangine and add the lamb pieces and sauté until evenly browned. Add all of the spices and the salt to the meat and cook for one minute over medium heat. Return the vegetables to the pan and add dates and 1 cup stock. Cover and cook gently, stirring occasionally until meat is very tender, 1 1/2 to 2 hours. Add remaining stock, a little at a time to keep the meat moist. Garnish with cilantro sprigs. Serves 4.
