Cooking with wonton wrappers ahead on show

Information on the power of GET statements and how to cook with wonton wrappers will be the featured topics on “Creative Living” 9:30 p.m. Tuesday and noon Thursday (all times Mountain).

Based on his new book titled “The Power of GET Statements,” author, Gary Barnes will explain what happens in the brain when we actually write GET statements. He’ll talk about how to create eight to ten GET statements and explain how to use them to achieve success. His company is Gary Barnes Int’l. He is from Littleton, Colorado.

Chef Johnny Vee (nee John Vollertsen) will demonstrate how to use store bought wonton wrappers to make salmon dumplings as well as a dessert. He is the director of Las Cosas Cooking School in Santa Fe.

IInformation on hanging artwork, time savers for quilting, and using a Giclee process to reproduce images on canvas will be the featured topics on “Creative Living” noon Tuesday and 2 p.m. Saturday.

Interior decorator Latriece Brooks is going to show a clever way to hang groups of artwork, whether it be paintings, photos, or crafted items, and it’s foolproof! Brooks owns Brooks Interior in Clovis.

Author and quilter, Meryl Ann Butler is going to demonstrate some clever time savers for quilting, and they are all based on her 90-minute quilt technique. She lives in Norfolk, Virginia.

Sandy Grossman-Morris is the owner and designer of Sandy Grossman-Morris Design, and she’s going to show how her company uses a Giclee process to reproduce images on canvas, which results in one that is vivid in color and water resistant. She’s from Brentwood, California.

Wonton Napoleons with Lemon Curd

For the curd:

Juice and zest of 3 large lemons

1 cup sugar

3 large eggs

1/4 teaspoon salt

1 cup whipped cream

Combine lemon juice, zest, and sugar in a medium metal bowl. Place bowl over simmering water on stove and stir until sugar dissolves. Beat the eggs in a small bowl and then whisk into lemon mixture, making sure water is only simmering. Whisk constantly until the mixture thickens. Remove from heat and chill over ice. Once the mixture is completely cooled, fold in salt and the whipped cream.

For the wontons:

18 wonton wrappers

Spray vegetable oil (like Pam)

Powdered sugar

Separate wonton wrappers and place on cookie sheet. Spray lightly with vegetable oil and place another cookie sheet of the same size over wontons. Bake in preheated 400°F oven until golden brown. Remove top cookie sheet and place wontons on cooling rack. When cool, dust lightly with powdered sugar. Put one wonton wrapper on each plate. Place a tablespoon of curd onto each wonton and scatter a few berries over curd. Repeat this with two more layers. Dust with powdered sugar and serve immediately. Serves 6-8.
