Food at the speed of life: Chocolate, bananas go good in s’more pie

I’m no Betty Crocker, but I am a dessert fan.

I created Banana S’more Pie to be easily made, and I thought the ingredient combination sounded good.

Unlike s’mores, it’s cold, but it has chocolate, marshamallows and graham crackers, plus bananas. It’s rich.

My co-workers tested the recipe and seemed to like it. Victoria, an ad representative, said the banana gave the chocolate pie a lighter taste, and Lili, a reporter in Clovis, liked the banana-chocolate combination.

Banana S’more Pie is also low-fat, though nobody seems to notice.

Banana S’more Pie

• 2 bananas, thinly sliced

• 1 3.9-ounce box of instant chocolate pudding mix

• 1 3/4 cup skim milk

• 1 6-ounce graham cracker pie crust

• mini marshmallows

Whisk pudding mix and milk together for two minutes, or according to pudding mix box instructions for chocolate pie. Cover bottom of crust with one layer of banana slices. Stick mini marshmallows in gaps between slices. Cover banana slices and marshmallows with half of pudding or a little more. Put another layer of banana slices on top of pudding. Cover banana slices with remaining pudding. Sprinkle marshmallows on top. Refrigerate overnight or according to pudding package instructions.
