My mother, Marianna, said her co-worker Denice talked about the meal she’d thrown together the night before. Mom tried the idea, tweaking ingredients to suit her taste. She says it turns out well and is easy to fix.

You can try different seasonings or vegetables. Mom suggests mushrooms, artichokes, carrots, snow peas or onion.

Mom’s Chicken for One

1 chicken breast

1 Tablespoon olive oil

1 cup broccoli, chopped

1 cup red, orange or yellow bell pepper, chopped

1 clove garlic, crushed or minced

1 Tablespoon fresh, chopped basil or 1 teaspoon dried, crushed basil

Salt and pepper, to taste

Parmesan cheese

Spaghetti

Put water on to boil for spaghetti. Chop vegetables and chicken into bite-sized pieces. (Your spaghetti should be added to the boiling water and cooking by now. Keep an eye on it. Remove from heat and drain when it’s tender.) Salt and pepper chicken. Heat olive oil in wok or large skillet over medium heat. Add chicken and garlic. Cook, stirring often, until chicken is done. Add vegetables. Cook and stir until tender crisp. Serve over spaghetti. Salt and pepper to taste. Sprinkle with parmesan cheese.
