Although my mom loves to cook the age-old recipes from the good-ole days, she does enjoy looking for new recipes that sound good, inexpensive and easy to make. This recipe was passed on to her by an Internet friend and she says that it really works and so easy. With a houseful of overnight guests, all she did was lay out the ingredients and let everyone make their own omelet.

OMELETS IN A BAG

Crack two large eggs into a quart size freezer bag. (More than two will not work) Shake and combine them. Add a variety of ingredients such as cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc. Whatever your heart desires. Mix well. Be sure to get all the air out of the bag and zip it up. Place the bags into rolling-boiling water for exactly 13 minutes.

(You can usually cook 6-8 omelets in a large pot.) Open the bags, and the omelet will roll out easily.
