Chicken makes for easy meal

Information on making belts, a program called SANE and refinishing tables for the home will be the featured topics on “Creative Living” at noon on Tuesday and at 2 p.m. on Saturday.

Belts are such a popular accessory right now, and Pat de Santis will demonstrate some ways to make several belts that are very economical and fashionable at the same time. She is a sewing expert with Wrights in West Warren, Mass.

Amber Hamilton is the administrator for a program called SANE, which stands for Sexual Assault Nurse Examiners, and she’ll explain what differentiates a SANE nurse and other RN’s, tell about state regulatory guidelines and explain why educating the public is such an important role of hers. She’s from Portales.

Furniture refinishing expert, Bruce Johnson will show how a pedestal table can be the perfect compliment to any room. Representing Minwax in Upper Saddle River, N.J., Johnson says there is definitely a table style for every room.

Information on cooking with grapes, creating faux finishes and pin weaving will be the featured topics on “Creative Living” at 9:30 p.m. on Tuesday and at noon on Thursday.

Jim Howard, California Table Grape Commission, will demonstrate cooking a variety of dishes incorporating grapes. He’s from Fresno, Calif.

Tracia Ledford, Delta Technical Coatings in Orlando, Fla., will show how to create a “faux finish” the easy way. She’ll also demonstrate the proper method to sponge paint, create marbling, combing finishes and more.

Creating memory books is fast becoming a popular hobby across the country. Pat de Santis, Wrights, will show several options for making covers for memory or scrapbooks. She’ll demonstrate pin weaving and show other uses for the finished projects. She lives in West Warren, Mass.

ISLAND CHICKEN AND GRAPE SALAD PITAS

1 1/2 lb. preshredded coleslaw mix

1 lb. grilled chicken breasts, cut into strips

3/4 lb. red and green California seedless grapes, halved

1/8 lb. peanuts, coarsely chopped

1 1/4 cups prepared, lowfat Oriental salad dressing

6 pita bread rounds, halved

In a large bowl, combine coleslaw mix, chicken, grapes, carrots and peanuts. Toss well to combine. When ready to serve, toss with dressing. Spoon about 1 cup of salad mixture in to each pita bread half for each serving.
