Creative Living: Meals made easy

Information on using convenience foods for seasoning and carving stamps for card making and scrapbooking will be the featured topics on “Creative Living” at noon on Tuesday and at 2 p.m. on Saturday.

Food consultant, Kathy Moore, Williams Foods, Inc., will share some easy dinner ideas that are inspired by popular Asian flavors and use convenience foods for seasoning. She’s from Lenexa, Kan.

Author and artist Margaret Peot shows how to carve a textural stamp and a pattern stamp to use in making handmade cards or for scrapbooking and journaling. Her latest book is titled “Make Your Mark,” and she lives in New York City.

Information on jacket construction and selecting new carpet will be the featured topics on “Creative Living” at 9:30 p.m. Tuesday and noon on Thursday.

Sewing expert, author and spokesperson for Viking Sewing Machine Sue Hausmann will demonstrate several fast techniques to speed up your jacket construction. She’s from Westlake, Ohio.

When selecting new carpet, Kathryn Sellers suggests considering traffic flow, carpet construction, color, texture, pattern and quality, as well as cost. She is with the Carpet and Rug Institute located in Dalton, Ga.

Szechwan Chicken Fingers

1 package (3/4 ounce) Sun Bird Hot and Spicy Szechwan Oriental Seasoning Mix

1 tsp. sugar

3 Tbsp. soy sauce

1/4 cup water

1 lb. chicken breast tenders

6 cups corn flakes

2 eggs, lightly beaten

Combine Szechwan Seasoning, sugar, soy sauce and water. Place chicken in resealable plastic food bag; pour seasoning mixture over chicken. Seal bag, refrigerate and allow to marinate 30 minutes. Preheat oven to 425 degrees. Drain chicken and discard marinate. Place corn flakes in a resealable plastic food bag. Crush until cereal is coarse crumbs. Place eggs in shallow dish. Dip chicken breast tenders in egg, then place one or two chicken breast tenders in corn flake crumbs. Seal bag and shake until tenders are evenly covered. Cover a baking sheet with aluminum foil, then spray with nonstick spray coating. Arrange crumb covered chicken breast strips on baking sheet. Bake 15 to 20 minutes or until chicken is fully cooked. Makes four servings.
